张亚辉,2020年加入浙江农林大学功能性食品与营养创新团队。2022年获批丽水市“百博入百企”挂职企业人才,担任嘉兴市第九批科技特派员。
研究方向
功能因子的功能性评价,食品纳米技术。
利用纳米技术增强功能因子的稳定性与生物利用度,同时利用细胞、动物模型等评价其耐缺氧(EGCG)、抗耐药(无机金属及半导体)、抑制冷后浑(茶乳酪)、降糖减肥(α-淀粉酶抑制剂,奥利司他)效能与机制。
